Our prices are based on the size or your particular event, and menu options chosen. They generally include one meat selection, two sides, bread or buns, and dessert. All plates, napkins, utensils, associated condiments and sauces are also provided. We are proud to offer:
MEATS
Beef Brisket
The undisputed “King of BBQ” in Texas! We rub ours with authentic, sweet and sassy “Texas BBQ Rub®” and slow smoke it to tender perfection. Served sliced with sauce on the side.
Pulled Pork
We cook it “low and slow” using our own spice rub and serve it with sauce and buns on the side. Eat it with the cole-slaw on top of the sandwich! Or just eat it plain!
Spare Ribs
“These are not your grandmas ribs!” We start with whole spares, trim them “St Louis Style,” rub them generously with a combination of our rubs and then cook them 5 - 6 hours of indirect heat and woodsmoke before finishing them with our own sweet-spicy sauce. The result is a meatier, juicier (slightly messier) rib with a beautiful pink “smoke ring” inside. You will love these ribs!
Chicken
We do leg quarters, breasts, and wings. Rubbed and slow smoked using apple, cherry, and hickory hardwoods. Sauce is served on the side (note: the skin will not be “crispy” on chicken prepared in this manner and the smoke will cause it to have a pink appearance called a “smoke ring.” We assure you that it is fully cooked!)
Pork Loin
Whole pork loin. Rubbed and smoked until done “just right!” This will be the most flavorful pork loin you ever ate! (Note: We will not overcook pork loin. It will be slightly “pink” inside. This is considered “safe practice” with this cut of meat today.)
